PRIMA Notes: One of the more interesting projects we’ve come across is Emiliano Falsini’s.  Falsini is a Tuscan native who studied winemaking in Florence and had winemaking stints in Bordeaux, California and New Zealand before starting a consultancy back in his native Italy.  It was through his consulting winemaking business that he made the connections necessary to start two projects of his own- one in Bolgheri, specializing in Cabernet Franc on the Tuscan coast and the other near Randazzo on the northern slope of Etna.  This latter project has produced some extraordinary results.  The Nerello Mascalese vines her farms are aged between 30 and 100 years of age and grown on the contrada Feudo Pignatone, an ancient estate whose vineyard parcels align atop a particular lava flow, the typical approach on Etna because the soils here vary wildly depending on the bands of historical lava flows that define them.  Falsini carries out a bunch-by-bunch selection of the grapes and uses about 30% of them as whole clusters in his fermentations which are separated out parcel-by-parcel before being aged for a year or so in small barrels, a few of which are new.
