The Barolo Riserva ‘Novantesimo’ 2011 is a celebration of the 90th Anniversary of the founding of Paolo Scavino winery. A selection of top fruit from 7 of Scavino’s crus (Cannubi, Monvigliero, Fiasco, Vignane, San Bernardo, Bricco Ambrogio, and Rocche dell’Annunziata). Harvest took place by hand in the first part of October, followed by destemming and a soft crushing of fruit. Fermentation and maceration occurred in cask, with punch-downs, pump-overs, and a submerging of the cap. Aging took place in 350-liter tonneau for the first year, followed by oak cask for the second and third year. The wine was then bottled and labeled with a reproduction of Scavino’s 1964 label used by Lorenzo and Paolo Scavino, who devoted their lives to the passionate and loving care of their family-farmed vineyards.
