John Rittmaster, Wine Director: Lovers of mature bubbles will fall hard for this golden, extraordinarily deep 100% Chardonnay from Bot River in South Africa. So many tertiary aromatics have developed already in this wine, but it still seemed fresh and with room to cellar even further. Close your eyes and you might think you’re drinking a perfectly mature bottle of really good Champagne. (Maybe it’s the RD on the label but its resemblance to Bollinger is uncanny!) ***+

Frank Rothstein, Minister of Value: An intriguing combination of bottle-aged Chardonnay and penetrating salinity. Certainly, one of the most thought-provoking wines of our bubbles, it really shines with the right foods. ***
