100% Barbera. The harvest takes place rigorously by hand, and the fermentation is spontaneous with native yeasts in temperature-controlled stainless steel vats. A first racking takes place in oak casks of various sizes. A second racking is performed between November and July, while the third takes place in October of the following year, when the wine is left to age in large casks before being bottled and released.
