The grapes undergo a gentle pressing, followed by an extended maceration of 25-30 days to enhance concentration and depth. The wine is aged for 18-20 months in French oak barrels and further refined in the bottle for six months before release.

The name "Giusto" honors the Patron Saint of Suvereto, the hilltop Tuscan town where Tua Rita is located, while "Notri" denotes the precise location of the winery.

First produced in 1992, this Cabernet-based wine represents the "soul" of Tua Rita, embodying the winery's philosophy of innovation, experimentation, and respect for natural rhythms, combined with a deep love for the land from which it originates.
