2022 Caymus California Cabernet Sauvignon
Caymus already has a well-established, nearly fifty-year old beachhead in the center of the Napa Valley. Their Napa Valley Cabernet Sauvignon is a benchmark few others can reach in terms of style-recognition and customer loyalty. Why not? Everyone who opens a bottle of Caymus Cab knows exactly what they’re going to get: Deliciously ripe front-and-center fruit, a plush texture rich with chocolaty, woodsy, spicy notes and a finish of soft, lush tannin. It’s been a time-proven recipe for success! The problem has been, though, the increasing costs associated with sourcing the consistently great fruit required to produce this wine in a place where vineyard land is some of the most expensive in the world. Naturally, though, with Caymus’ spinoff brands successfully probing the rest of California, they also have access to lots and lots of Cabernet fruit not usable in a Napa Valley wine. The outstanding quality of this fruit- from places like Paso Robles, the Suisun Valley, San Benito County, Monterey and others- led, inevitably, to the Caymus brain-trust bringing the formula for the Napa Valley Cab’s success to bear on this much less costly material. The result is Caymus’ very first California appellated Cabernet Sauvignon, the wine we’re calling here at PRIMA ‘Baby Caymus.’ Of course, this is a complete misnomer because there’s never been a Caymus wine that could be called ‘baby’ anything! Like its Napa Valley cousin, the just-released second vintage California Cab is jam packed with rich, savory fruit, notes of Dutch chocolate powder, mulberry compote and warm cinnamon spice. Finishing with plush, round tannins, its luxurious, silky palate is pure Caymus, and purely delicious. Caymus has decided to focus on restaurants with this wine. While the 2021 was generally available at larger retail, this 2022 is being limited mainly to restaurants. And us! For a limited time, we’ve got it at an unbeatable introductory price.
