The recent shakeups in the Burgundy market continue to spin off some intriguing deals! How about Domaine Vocoret’s lovely, old-school Chablis for under $35?! From a four-generation family with around 50 hectares in virtually all of Chablis’ major climats, this venerable representative of the appellation is a classically styled Chablis with a solid core of mineral-infused apple-Bosc pear fruit and lots of pretty lime blossom, lemon curd and baking spice elements that add complexity and interest to a thoroughly charming, mid-weight white with plenty of verve and that flinty only-in-Chablis finish to bring it all together. Unoaked, this entrancingly pure expression of Chardonnay would be the perfect ‘Chablis and Oysters’ pairing and you don’t have to wait to do it, either. But if you lose a bottle or two in the cellar, that wouldn’t be a bad thing either. Very highly recommended at a nice price.
