2023 Jean et Sebastien Dauvissat Chablis 1er Cru Vaillons

So many Dauvissats. So little wine.
Sébastien Dauvissat is the most recent generation in the extended Dauvissat clan that has been in possession of this small domaine since 1899. The cave under the family house dates from the 17th century, and the first formal bottling of wines under their own Dauvissat label was back in 1963. Then, in 1978 and 1979. Sebastien’s father Jean increased production to 3,000 bottles per annum and, once he stopped selling the grapes he so painstakingly farmed to negociants, expanded the entire annual production to approximately 50,000 bottles. The domaine encompasses slightly less than 10 hectares of vineyard with great parcels in both the Grand and Premier Cru vineyards.
The tiara in the Dauvissat crown, though, is probably the very small parcel of old vines in the tenderloin of the Premier Cru Vaillons with gnarly Chardonnay vines aged over 70 years. While there is a separate bottling dedicated to them, a portion makes up the core of Sebastien’s very impressive Vaillons bottling. This is a great holding that produces great wines!
The 2023 Vaillons is a classic in every way with all of Chablis’ hallmark minerally petrichor revolving around a core of ripe pear-apple fruit and the kind of saline finishing pop one expects from a producer and vineyard of this caliber. Wish we had more!
