Cathy Corison’s elegant, polished estate Cabernet Sauvignons need no introduction to PRIMA customers. Long one of our very favorite producers of Napa Cab, all of us have multiple vintages in our cellars. What many of you don’t know—if you haven’t visited her cellar on Highway 29 in Saint Helena and tried it—is that she also makes a very special rosé! Created by bleeding off some of the as-yet uncolored juice as the grapes are crushed, she ferments the wine in older barrels until completely dry, ages the resulting wine on its lees for six months and clarifies it in a tank before bottling. And then she waits for its natural tannins and acidity to mellow a bit before rolling it out the door. Sounds simple, but it isn’t. It takes a winemaker of Cathy’s uncommon skill and experience to make a good dry rosé from Cabernet.
 
The 2024 is current and a fabulous drinker! Copper with a red cherry rim, not at all light or ‘easy,’ it drinks like a gorgeous rosé Champagne without the bubbles; fresh, elegant and just textural enough to stand up to all kinds of fare. This had some debate about how to rate this on our Scientific Rosé Scale but we decided on *** Hammocks (maybe ***+) and **** Arugulas.
