The just-arrived 2025 Greywacke Sauvignon is pleasingly rich and satisfying on the palate with an amazing set of lively, lifted aromatics; a hit of freshly crushed lemongrass gives way to floral notes of jasmine, fennel, dried honey and acacia that hint at something more lithe. The mid-palate gains richness from some extended lees contact in tank and a portion fermented in neutral barrel. The finish is all juicy mineral and natural tang, making it a mouthwatering partner to all kinds of food.
