This additive-free tequila (pronounced kahs-kah-WEEN) is made from 100% Blue Weber agave grown in the Jalisco lowlands. After harvesting, the agaves are oven-roasted, then extracted via roller mill. It is twice distilled in a copper pot still, then aged in ex-bourbon barrels for 6 to 8 months.

 

Texturally satisfying and terrifically dry, it exhibits notes of vanilla, caramel, citrus and black pepper, with a touch of spice from the oak and a distinctive earthiness that punches up the complexity even further. 

 

It does make a sensational Margarita, but a tequila this special is best enjoyed neat—preferably alongside a heaping platter of carnitas or chicken fajitas.
