Cazcanes has become something of a cult favorite among tequila purists, thanks to its almost stubbornly traditional approach to production. The distillery sources mature highland agave, cooks it slowly, ferments naturally, and uses natural spring water from the nearby Navichi springs—a rarity in modern tequila, where treated municipal water is the norm. The brand also earned early attention for its unusually high verification score from Tequila Matchmaker’s additive-free program, which helped cement its reputation among agave geeks.

The No. 7 Reposado spends just a few months resting in oak, adding a light polish without burying the agave. Roasted agave leads the way, followed by citrus peel, honey, white pepper, and a hint of vanilla from the barrel.

Silky and balanced, it’s a terrific “bridge” tequila: structured enough to sip neat, but also excellent in a refined Margarita or tequila Old Fashioned where the agave still gets la última palabra—the last word.
