Blanc de blancs is my preferred style and the Diebolt-Vallois is a real winner. Its pedigree is obvious from the clear, well-defined flavors and the low dosage makes it extraordinary. ★★★+ FR

A bigger style of palate turns minerally and precise in this very classy Champagne. For lovers of very dry bubbles, this would be fun to cook to (while drinking Guy Charlemagne while in the kitchen) ★★★ JR
