Uncle Val’s is a small but distinctive California gin inspired by the founder’s uncle, a lifelong gardener whose herb garden became the blueprint for the recipe. Rather than pushing juniper aggressively—as many classic London Dry gins do—the focus here is on fresh culinary botanicals.

Cucumber, sage, lavender, and citrus peel give the gin a soft, aromatic profile that feels almost Mediterranean in spirit. The juniper is present but integrated, allowing the herbal and floral notes to take center stage.

The result is fresh, elegant, and highly versatile. It makes a gorgeous Martini with a twist (try Meyer lemon if you can source it!) and makes an especially refreshing and ambrosial gin and tonic.
