For the mezcal-curious who want nuance, not an ashtray, Agua Mágica is a smart place to start. This joven is made from Espadín and Tobalá, a combination that gives it enough familiar roasted-agave generosity to feel immediately pleasurable but enough lift, perfume, and mineral detail to keep things from going flat. The production stays old-school: agaves cooked in an underground pit, crushed by horse-drawn tahona, fermented in wooden vats with local river water, and double-distilled in copper. We apparently can’t really say anymore that an agave spirit is free of add***ves … but it is indeed free of add***ves.
The result is less “campfire in the face” and more of a polished Oaxacan texture: tropical fruit, Marcona almond, herbs (I detect a faint bass note of epazote), a saline undertone, and a sensible amount of well-integrated smoke. It’s cocktail-friendly without feeling anonymous and is also very enjoyable sipped neat with food—try it with oysters, green olives, queso Oaxaca, grilled shrimp, or anything with lime, chili, and salt.
TL;DR: This is mezcal with manners, but not without a pulse.
