Employing methods passed down through generations, their skilled jimadors carefully harvest the agave piñas from the agave fields. These piñas are subsequently cooked in traditional masonry brick ovens, resulting in a delicate caramelization of sugars that imparts subtle hints of cinnamon, clove, and other inviting spices.
